A Mexican delight

There’s so much to choose from in Mexican cuisine, but a full-proof crowd pleaser is always tacos.

The traditional Mexican dish is made from corn or wheat tortillas, topped with a delicious filling. The tortilla is then folded around the filling of choice.

Let your imagination run wild and choose from – beef, pork, chicken, seafood, vegetables and of course, cheese.

And the garnishing? Salsa, guacamole, sour cream, lettuce, onion and tomatoes all play a role in making tacos extra delicious. Easy, nutritious and tasty, what more could you need for a family feast?

Executive chef Ezequiel Cardozo, of Malibu Deck at Paramount Hotel Dubai, has shared his ultimate recipe that you can recreate at home.

Ingredients 

For the chicken:

  • 2 chicken breasts diced
  • 2 packs of flour tortillas
  • Tomato sauce
  • Red cabbage
  • 5g salt
  • 1g pepper
  • Pinch of cajun pepper
  • 1 lemon
  • Ripe avocado

For the chipotle mayo:

  • ½ cup of sour cream
  • ½ tbsp chipotle powder
  • ½ tsp garlic powder
  • Dried chives

Method

For the chicken:

Marinate the chicken in tomato sauce with salt, pepper and cajun, ideally a few hours in advance and keep refrigerated.

Shred red cabbage and marinate it with lemon juice, salt and pepper, keep on the side for at leave 20 minutes.

Cook the chicken in a hot pan or a grill.

Slice avocado for garnish and drizzle chipotle mayo on top.

For the chipotle mayo:

In a small bowl, whisk well together ½ cup mayo, ½ cup sour cream, ½ tablespoon chipotle powder (or chipotle chili), ½ tsp. garlic powder, a pinch of salt and black pepper, dried chives.
