In an F&B landscape teeming with Italian restaurants, Scalini continues to holds its own through consistently delivering an exceptional dining experience from start to finish.

This export from London brings Southern Italian fare all the way to Dubai and prides itself on serving authentic creations within a familial atmosphere. Its extensive menu, curated and conceptualized by Chef Stefano Nava (who joined the Dubai outpost earlier this year), features truly classic creations such starting from the carpaccio alla rucola o al tartufo (beef carpaccio served with black truffle) to the tagliolini con caviale, burro e limone di Amalfi (tagliolini with caviar, butter and fresh Amalfi lemon) and scampi alla griglia (grilled langoustines with butter, garlic and chili) as well as desserts like the tiramisu and pistachio ice cream, whose beauty lie in its simplicity.

Having recently joined the Dubai outpost earlier this year, Chef Stefano brings a wealth of culinary experience and a fresh perspective to Scalini as the Head Chef. In this interview, he shares with Emirates Man his culinary journey and what is driving him to elevate the concept that celebrates the authentic allure of Italian cuisine, and presenting it in an elevated yet charismatic manner.

Talk us through your journey to date and what led you to bring your culinary expertise to Dubai.

My culinary journey began in Italy, one of the world’s premier food destinations. After years of honing my skills in renowned kitchens alongside celebrity chefs, I decided to broaden my horizons and venture abroad. I sought a place where I could freely experiment and share authentic Italian cuisine with a discerning audience. Dubai was the perfect choice—a rapidly growing city with a vibrant culinary scene, home to numerous innovative concepts and many highly skilled professionals and chefs

When did your love for food begin?

My passion for food started at home, much like it does for many chefs. My grandmother, who remains an incredible cook, was my greatest influence. From her, I learned not only the value of tradition but also the importance of using organic, raw ingredients—an aspect of cooking that I hold in the highest regard.

Tell us more about the ambience of the restaurant. What can guests expect from their dining experience at Scalini?

At Scalini, every guest can expect a warm and welcoming Italian experience. With exceptional food and a charming atmosphere, our dedicated team, talented waitstaff, and skilled managers ensure that every visit feels like coming home.

How did you conceptualize Scalini’s menu – can you tell us more about your creative process?

The creative process behind Scalini’s menu is quite straightforward. Our goal is to deliver exquisite, original Italian cuisine with an authentic touch, all while staying true to our roots and identity—even when we are far from home.

To you, what are the hero dishes to try at Scalini?

At Scalini, the must-try dishes include our signature Spaghetti Lobster, a beloved favorite, and our decadent Pistachio Ice Cream—a true delight for dessert lovers like myself.

Scalini offers a truly unique dining experience, made authentic by our exceptionally well-trained team, whose passion for food and hospitality sets us apart from many other culinary destinations in the city.

What were some of the most valuable lessons you learned from your previous experiences at Roberto’s and other Michelin-starred establishments?

The most important lesson I’ve learned from my experiences is: Trust your palate, and success will follow. Believe in yourself and nourish others with small bites of love.

How would you describe your culinary style – did any mentor or a childhood memory influence this?

My culinary style is rooted in tradition, with a special emphasis on vegetables and sauces. However, I also consider myself versatile, capable of crafting fine dining dishes and experiences that reflect both creativity and elegance.

What have been the key milestones in your journey as a chef so far?

Every day has been a milestone, and while I don’t have a specific standout moment, I recognize that I still have a long journey ahead!

What advice do you have to aspiring chefs looking to make a mark?

Discipline and consistency are fundamental pillars in this industry, serving as key factors for success. To all the chefs out there, don’t give up and continue working hard—everything else will fall into place in time.
