Best way to start the day

Breakfasts are an indulgent way to begin your day.  And no breakfast can be complete without a helping of eggs in some form or another. We think eggs benedict is always a winner. So, we asked executive chef Martin Brenneisen from Chival at La Ville Hotel and Suites, City Walk to share one of his classic favourites.

Ingredients

1 wheat muffin

4 slices of turkey ham

2 poached eggs

2 cherry tomatoes

60g Hollandaise

3g Chives

Method

Poach the eggs in simmering water.

Grill the turkey ham

Caramalise the cherry tomato (sautéed quickly on a hot pan with maybe some rosemary and olive oil. You can even add a little sugar if you prefer)

Toast whole wheat muffin with butter. Top each half with a bacon rasher and a poached egg. Spoon some hollandaise sauce over each egg and sprinkle with chives.

Serve hot
