Simply delicious

If you haven’t added this golden-hued creation as part of your breakfast or dessert, you will want to now. Great on its own, you can make it as divine as you want, by adding your own toppings.

As Leslie Knope said in the sitcom Parks and Recreation, “We have to remember what’s important in life: friends, waffles, and work. Or waffles, friends and work.” We can’t help but totally agree with her. Waffles, in all their mighty goodness, wiggle their way to prime position.

waffles recipeGluten Free Banana Oat Waffle

Ingredients

2 cups old fashioned rolled oats, gluten-free as needed

1 cup unsweetened vanilla almond milk or other milk product

1 1/2 teaspoons pure vanilla extract

2 large eggs

1 medium ripe banana

1 teaspoon cinnamon

1 teaspoon baking powder

1 packet stevia or other preferred sweeteners (optional)

Optional toppings: almond/peanut butter, coconut butter, coconut oil, honey, maple syrup and/or fresh fruit, you can also add protein powder.

Method

Preheat waffle iron and spray with cooking spray.

Blend all ingredients in a blender until almost smooth.

Pour about 3/4 cup batter onto the waffle iron. Allow waffles to cook. Tip: If you like your waffles a little crispier, cook on the highest setting and a little longer from when the waffle iron goes off.

Continue with the rest of the batter. Depending on the size of your waffle iron, the recipe should make about 4 waffles. Have fun adding some of your favorite toppings.
