Asian Salad Recipe From The Noodle House

Ingredients:
For the salad:
- 120g green mango, peeled and julienned
- 120g carrot, peeled and julienned
- 120g cucumber, julienned
- 12 mint leaves
- 120g red onion, peeled and finely sliced
- 80g white cabbage, shredded
- 80g iceberg lettuce, shredded
- 80g cashew nuts (optional)
- 4 wonton skins, sliced and fried
For the dressing:
- 50g red chilli, seedless and diced
- 30g garlic, peeled and diced
- 20g coriander root, chopped fine
- 150ml fresh lime juice
- 100ml fish sauce
- 100g palm sugar
- 25g lime leaves
Method
For the dressing:
- In a blender, mix red chill, garlic and coriander until it becomes a paste.
- In a clean mixing bowl, add the paste and whisk with lime juice, fish sauce, palm sugar and lime leaves until mixed thoroughly.
For the salad:
- In a clean mixing bowl, add green mango, carrot, cucumber, red tomato, mint leaves, red onion, white cabbage, iceberg lettuce, cashew nuts and dressing and mix thoroughly.
- Place in a serving bowl and garnish with fried wonton skin.
