SALMONE (Marinated salmon, baby vegetables, red shrimp, caviar, ginger and chives)
Serves 4 | Preparation time: 30 minutes | Cooking time: 15 minutes
Ingredients:
- 500g fresh salmon
- 20g chives
- 20g extra virgin olive oil
- 50g salt
- pinch of salt flakes
- 100g sugar
- zest of one orange
- 50g mix cress
- 50g mix salad
- 8 pieces baby carrots
- red radish
- 4 pieces asparagus
- 8 pieces cherry tomato
- 8 red shrimps
- 20g Taggiasca olives
- 20g purple potato chips
- 20g caviar
Method:
- Marinate the salmon with salt, sugar and orange zest and then place it in the fridge to rest for 25 minutes
- Take the salmon out of the fridge, wash in cold water and dry it
- Blanch all the vegetables in salted water for three minutes and then cool down in ice water
- Chop the ginger and the chives, mix them with extra virgin olive oil and keep aside
- Slice the marinated salmon horizontally across the whole length of the fillet with a sharp knife to create a rectangular carpaccio-like thin slice
- Place one slice on each plate and season it with the chopped ginger and chives
- Dress all vegetables, the cress and the salad on top of the salmon slice
- Add the red shrimp, caviar and a pinch of salt flakes to finish
Chef’s Tip: Try to use wild and not farm salmon. In case only farmed salmon is available, choose the organic or certified sustainable option
