If you are after a simple yet impressive dish to serve friends and family during Ramadan then look now further than this recipe – a traditional tagine with a modern twist.
CHICKEN TAGINE WITH DATES
Serves 4
INGREDIENTS
- 1kg chicken thighs
- 2 sliced onions
- 5 cloves of garlic
- 1tsp cumin seeds
- 1tsp ginger powder
- 1tsp coriander
- 1tsp curcuma
- 1tsp cinnamon powder
- ½tsp red chilli powder
- a pinch of nutmeg powder
- ½ litre of chicken stock
- 100g dates
- 100g dried apricot
- 100g almonds
- 50g honey
- little olive oil
- fresh coriander leaves
- Salt and pepper to taste
PREPARATION
- Gently mix all dry ingredients together in a large bowl.
- Then in a pan, add oil, garlic, onion and the spices. Allow to cook slowly until onions are tender.
- Add the chicken bits, the apricots, then add the stock. Complete with water if necessary.
- Allow to cook slowly for one hour with cover.
- Add the dates, the honey. Season at taste and add the chopped coriander before serving.
