Proving how versatile quinoa is, this salad is perfect as a side at a gourmet BBQ or a hearty lunch – one that will sustain you ‘til dinner.

This is an ideal recipe for vegetarians, with the feta making up for the lack of meat. Carnivores can, however, add in strips of grilled chicken if they feel the need.

QUINOA SALAD WITH FETA AND MINT 

Serves 4

30 minutes

Recommended NStyle polish colour: Olive Tree

INGREDIENTS

  • 2 cups cooked quinoa
  • 1 medium cucumber, sliced and chopped
  • ½ cup celery, chopped
  • 2 tbsp fresh mint, chopped
  • 1 cup good quality feta

DRESSING MIX

  • ¼ cup good quality olive oil
  • ½ cup lemon juice
  • 2 tbsp light honey
  • 1 tsp oregano
  • Pinch of salt

PREPARATION

  • Cook quinoa as required. I boil with chicken or vegetable stock, as it gives it a better flavour, it really makes a difference. Cool.
  • Mix in with the quinoa cucumber, celery, mint, and feta.
  • You can also get creative and mix in tomatoes or any other vegetable.
  • Serve dressing on the side.
