Watermelon-Salad, Right Bite

For a glorious and just the rite bite of watermelon, try our quick and easy-peasy summer starter. 

WATERMELON SALAD

Seves: 1 | Preparation time: 10minutes

Ingredients:

  • 200g watermelon, sliced into big cubes
  • 75g light cream cheese
  • 60g rocca leaves
  • 5g green olives, sliced
  • 1g basil leaves

 

For the dressing:

  • 8ml balsamic vinegar
  • 6g honey
  • 5ml olive oil
  • salt and pepper, to taste

 

Method:

  1. Wash all the vegetables thoroughly.
  2. Arrange the rocca leaves in the bottom of the dish and place the watermelon cubes on it.
  3. Using a piping bag, pipe the cream cheese on top of the watermelon
  4. Arrange the green olive slices and basil leaves.
  5. Blend all the ingredients together for the dressing and adjust seasoning as per taste.
  6. Serve chilled with dressing on the side.
