Nutritious snack bites ideal for that ladies’ night along with a few cheeky mocktails. Crowd pleasing and impressive on the eye, these fritters tick all the boxes, Chef Max Grenard, Culinary Director at Legends, reveals how to perfect the sweet treat.

INGREDIENTS  | Pineapple fritters Serves 4

  • 600g pineapple
  • 170g flour
  • 170g corn flour
  •  30g baking powder
  • 70g sugar
  • Oil to fry 
  • Banana chips for garnish 

Banana milk shake

  •  ½ banana slice
  • 150ml milk
  •  1tsp cinnamon
  •  1/3 cup crush ice

Valrhona white chocolate opalis and coconut sorbet 

  • 57gms Opalis Chocolate
  • 125ml coconut milk
  • 57gms Opalis Chocolate 
  • 125ml coconut milk
  • 15ml honey
  • 1.25gms orange peel (grated)

METHOD

  • Cut the pineapple into small fingers and mix into the batter made of flour, corn flour baking powder and sugar, fry in hot oil till cooked and roll the pineapple fritters in grain sugar.

For the banana milk shake 

  • Mix all the ingredients together and blend to make a smooth milk shake.

For the sorbet (Paco jet )

  •  Heat to boil honey, coconut milk and orange peel.
  • Add the chocolate to melt, place in a beaker and mix well. Allow to cool, cover and freeze at minus 20 degrees for 24 hours.
